Our resident chef, Island Joe, has been working throughout Australia and Papua New Guinea and draws on his years of experience to create daily menus based around local culinary delights.
There is an abundant vegetable garden and the islands have been planted with fruit trees throughout so there is a limitless supply of fresh produce.
Naturally the predominant source of food is the abundant waters surrounding the islands. Countless varieties of fish from tuna and mackerel to coral trout and trevella are all regulars on the plate. Lobster, crayfish and countless other marine delicacies are also readily available. For the all important 'surf and turf BBQ, all the best quality meats are imported from Australia.
The Club House
Meals are largely served in the Club House, either buffet or a la carte. Traditionally taken together on either the large outdoor or indoor table. Hot and cold breakfasts, fruit platters, cereals and fresh juices are available throughout the morning. Lunch and dinner includes soups, salads and seafood before a dinner of meats, seafood, roasts and BBQs. Guests are however welcome to lead the menu.
The Aussie BBQ
We understand that whilst many of you would like to have all your meals prepared for you, others may enjoy cooking their catch themselves. Therefore a large beachside BBQ area has been set up for you to take the reigns and host your own BBQ.
The Traditional BBQ
One of the great experiences available on Panasesa is the traditional sand- pit BBQ, hosted for you by our local staff. Fresh seafood and vegetables are wrapped in banana leaves and slow- cooked in the customary pit of hot embers as well as grilled over the fire on our portable grill plate. Delicious and tender every time! It is also a lovely opportunity to enjoy the other islands and to meet some of the staff.

Our chef is happy to cater to your requests and any special dietary requirements. Please discuss these with your bookings agent so that we can be prepared well in advance. On a day by day basis on the island, please discuss with the manager your preferences for where meals are to be taken and what is being served in order that we may best cater to your needs.
